what is the best way to make cheese :mad: paste can`t seem to get it right thanks

There's probably easier ways to make cheese paste than my method Tony, it's an old system but tried & tested for all that.

First get your bread & give it a quick soak, then lay it out in a damp tea-towel. Next get your required cheese (Danish Blue is v.good) & grate it over the bread.

If you wish, add a little custard powder to the mix it gives a superb cloud effect when it's mouthed by the fish not to mention the added taste.

Wrap the whole thing up in the tea-towel, then sit in front of the telly or put the headphones on & knead away to your hearts content. It doesn't take long to get a beautifully smooth paste.

If you have the mix too wet just add a bit more grated bread & cheese.

here is my two recipes which i use.first is one by tony miles the other is a traditional one. both are addaptable so you can add what you like

The second most common bait question I'm asked (the first is what is the exact recipe for my current barbel bait!) is how do I prepare my cheese paste for winter chubbing.

Many anglers I have met on the bank have expressed surprise at how soft the paste is even on the coldest of days.
For those of you that have never seen the recipe before, here goes. You will be amazed how simple it is, and how deadly. Over the last few seasons, it has accounted for over fifty five pound chub and four sixes.

First, obtain some frozen pastry. I have used both short crust and puff pastry. Both give good results, although the puff pastry is slightly more elastic. Personally, I prefer short crust but I don't think it makes that much difference.

Then, on a clean board, roll the pastry until it is a thin sheet.

At that point, if you intend any additional flavouring, smear the pastry lightly with the chosen flavour. In my case, I use perhaps 1ml of Hutchy's mature cheddar per half pound of pastry. Then, with the pastry moist, I add a powdered colour. This is not strictly necessary, but as I colour code my pastes, I use red for my cheese paste. I have done this for years, and the chub have always loved it. The amount of colour in not critical, I perhaps use a teaspoonful to give a good rich red.

Then I add finely grated cheese, half and half Danish Blue and mature Cheddar, using 4ozs of each.

Evenly spread the cheese over the pastry, and then parcel the corners of the pastry over the cheese. Then simply start kneading. Initially, you will get a messy, multi coloured ball but as mixing continues, the texture becomes smoother and smoother and the colour progressively more even. It perhaps takes ten minutes to produce a ball of paste of smooth, even texture the size of a small orange.

Then I take a freezer bag, smear the inside lightly with a tiny amount of concentrated flavour, seal the bag and pop it in the freezer.

The act of freezing tightens the whole thing up, and when it thaws you have one of the deadliest chub baits going, and one that stays soft and pliable in the lowest water temperatures. What's more, it lasts for ever. I have pastes that have been in and out of my bait freezer for two years or more, they simply improve with age.

One tip. Do not use the wife's best utensils.Mature Cheddar is pretty rank and red dye and new wooden rolling pins are not compatible!

second :traditional cheese paste
Go too your local supermarket and buy some Danish Blue cheese
Crumble your Danish Blue and pour on a VERY small amount of HOT water and mash until you get a thick creamy consistency. Then add liquidised breadcrumb and mix thoroughly to form a putty-like feel. You can add colour or flavour at the cream stage if you like, some add horrible fishy smells, Mature Lobster and the like, but I'd add some Magnatract (half a sachet) if you've got it, if not nothing will be fine. Roll into a ball and wrap in foil, then clingfilm, then a plastic bag, then a box, you don't want it to escape! Leave in the airing cupboard for 48 hours, put it in your tackle box and leave it. When you need it, unwrap at arm's length and you will see it has formed a life of its own. There will be a brown/green mould on the outside and the paste itself will be a very pleasing pus colour. Mould a BIG lump (cherry size) around a leger stop on a hair below a size 6 minimum hook, tied to 6lb minimum line NO MORE than 4 ins from a lead that will NOT move in the flow. Heave it and leave it. Each cast should last at least 30 mins, longer if you are brave enough. If there is a chub within 20m of your bait at any time during the day, you will catch it.
