I really fancy experimenting with flavourings this year, probably mainly on pellets.

What i would like to know is, can you OVEr flavour something and put the fish off? or is it a case of the stronger the better?

Ta.

Too much flavour will definitely be counter productive. It can make your baits bitter and unattractive to fish.

For a long term bait(of the paste and boilie type) it is better to use flavours at about half the reccommended levels. This merely gives a "label" to your bait in the hope that the fish will be looking for it on a regular basis. You have to be putting it in regularly of course to achieve this.

Pellets are not going to have the same long term benefits of a regularly introduced HNV bait so you can go heavier with the flavours if you are going to change it on a regular basis, but it is still not advisable to use too much.
