Hi All,
I am thinking of buying a smoker (mainly for sea fish) and thought this would be a good place to come for advice. if you are hot smoking, i use a kettle barbeque with a small amount of charcoal covered in wood chips then put the lid on, check the fish at regular intervals, it wont take long.
