I think you need a licence to deliberately catch them, but if you do catch a signal crayfish accidentally it is illegal to put it back. Sorry, can't help with spots in Somerset, too far south for me.

A protected species on the verge of extinction, due to American Crayfish in UK waters who are hell bent on wiping our species out!

Ah! Think you need an Environment Agency licence then. I gather they make good eating and are very saleable to the restaurant trade.
