Apologies K.C. if you're already doing this, but if you fillet your Rainbow then leave the fillets in lemon juice for a few hours, it gets rid of that 'orrible pellet taste & no matter how you cook them after that it's a lot cleaner & sweeter.

Nice fish Koi - don't let anyone tell you to be disappointed it is not a "double" - just be very pleased it is nine-and-a-half!

 

When you eventually get a bit surfeited with fresh rainbow (and you will, mate, you certainly will, if your flyfishing continues to be successful) then buy a "hot smoker" - smoked rainbow is much nicer than fresh, and you can smoke other fish, meats, etc in it.

 

We are working our way through the 70 odd lbs of salmon fillets we brought back from British Columbia (see sea forum "salmon from the sea")

 

Alternatively, it is worth sending any fish over ten pounds for COLD smoking and slicing (or if you are really keen, build a cold smoker in the garden)

 

A tip for those sending fish to the cold smokers - after gutting the fish, trim off the fatty sides of the belly - if not they will be included in your parcel of sliced smoked rainbow which you get back. and a/ they are not very tasty, and b/ they bump up the weight and hence the cost. Use the trimmings to make fish stock for your next fish-and-vegetable soup.
