I like young chicken that has been basted in olive oil, just so much as to leave it nice and tender, together with strips of delicately cut potato which are lightly crisped in deep fat and the juice of fresh sun kissed tomatoes.

But it always seems to look like bleedin egg and chips with ketchup.

Onion, bacon and potato hotpot.

Two big spuds,

two big onions,

half a pound of streaky bacon in one piece,(not rashers)

a pint of cheese sauce

Slice the spuds thinly and line a casserole dish with some of them, use the rest to build up layers of spud, onion and chopped up bacon, add plenty of freshly ground black pepper as you go, finish off with a layer of spud on top and then pour the cheese sauce on.

Bake, covered, at about gas 6 for an hour and then bake for another 45-60 mins uncovered until the top is crunchy.

Well, after a hard day's slog on the riverbank, I always go up west and have my favourite meal:

Lumache alla Vernaleone;

Effilochés de boeuf aux cèpes;

Tief-fritierte camembert mit Holunderbeeren.

I just wish I knew what it all was! :confused:
