I'm a chef and recomend Global filleting knives there japenese and will last you the rest of your life made in the same way as the samuri swords were, cost a few quid but worth it. or get a swedish/finish filleting knife, there nice and thin and last a long time.

 

Best value for money fillleting knife would be a Victorinaux filleting knife with rose wood handle, the rose wood handle version are more expensive but have better blades. this is the company that makes the swiss army knives
