pickled walnuts

Hmmm, spooky coincidence seeing this thread tonight.................today I found a walnut tree and took a handful off. Thing is they currently look like greengages and if you smash them open the nut inside is white and fleshy (but fills the husk).

 

My question is, how does one know when the buggers are ripe?

 

I also found a row of hazelnut trees and picked up around 5 kilos of those today.
