I would suggest talking to one of the bait companies and/or one of the boilie rolling services. Can't guarantee they wouldn't consider it a 'trade secret' or such like but they'd know.

this german company make boilie machines and they claim there professional but how good hey are i dont know ive never used them and a company called 5mix make sausage guns but again i have no idea how good they are. probably wont be any help at all but i thought id give you my 2peneth

I have a 5mix gun,its a very good bit of kit,and manages to extrude even really stiff mixes

There was a thread very recently showing some commercial bait rolling machines.A lot of top bait companies I know just started out with a big rollaball, industrial mixer and Baby Burco!
