Notice the swells that the kayak is sitting out in - quite happily. The venerable (or should that be venereal) Organ was quite content to sit on the kayak with it riding up and down between his legs (yes, deliberately left open to intrepretations later...)and cast his dirty great rod about the place:

As the tide ebbed it got quite rough - but nothing to worry a good sea kayak - more comfortable in this kind of wave than a small boat I can tell you:

here is the Scupper Pro on the same day - with George in it/on it. He was after a tope, hence the big chunk of mackerel head...

Well, I could have sworn it was there when I last looked! This is actually my Dorado and not George sitting out on the Pro :D

Look at the lines - sweep gently in a curve from one end to the other - notice the bow and stern are OFF the ground. That is rocker and it is what helps a kayak to be able to be turned. BUT notice too the broad section in contact with the ground - the belly if you like. Plenty of stability provided exactly at the point where you sit - a well designed kayak.

Be careful to read the American reports with care. Most of the reports on that link from Joey's site are from people who are fishing small lakes - the salt water reports are from people who are fishing flats type ground and one of them actually says it is short on legroom if you are over 6 feet.

If you are only going to fish estuaries which are well protected then ANY kayak will suite - it will just be down to how much you need to stuff on it - fly fishing not much!

If you intend to fish - like the Organ was - an open coast reef, albeit not that far out, then you need a kayak with plenty of SECONDARY stability to sit comfortably out in the chop beam on while you fish - you don't want hairy moments every other wave or it to suddenly go squiffy under you just as you power your cast forwards!

A rounded bottom is something to look for - that is the sign of a kayak with good secondary stability. A hard chine from a flat bottom to the side of the hull is generally the shape of a very solid primary stability, but a sudden loss of secondary as it gets over onto the chine - lookout here comes the cold moment!
