Ever eaten a garfish?

I have. Last night, and it was rather good. I had an on-board casualty (they usually go back) -idiot fish mangled itself in the trace and broke its beak. I did a Google search and found they are rather popular for Cajun recipes, so it was filleted and skinned (leaving the wierd green bones well out of sight of the wife), rolled in Jerk Seasoning, flash fried in a very hot pan and served with rice, chilli beans and green beans (and a cold, cold beer): a meal fit for a Cajun king if I may say so.

the thing you really need to try is razorfish. its criminal to use them as bait when they taste so good!they need to be fresh, and put straight on to a sizzling hot plate....turn over after after 20secs for another 20 secs, a squeeze of lemon...youlle never use them for bait again!!!!

cheers dave. :D:D
