Finn - why do you single out rats? Recipe to follow:

 

Skin whole and put 3 rats in a frying pan with melted butter, sizzle until brown (or black if black rats).

Place sealed rats into a casserole with 2 glasses of port, black peppercorns (3 per rat) juniper berries and a good dollop of blackcurrant jelly per rat. Shove the casserole in the oven at about 200 degrees C - gas mark 5. Leave to cook for cook for about 40 minutes.

 

Meanwhile in the frying pan add celery, carrots and onions chopped finely and fry in the juices of the rats and butter until softened and just turning brown.

 

When rats are cooked strain and place on warmed plates. garnish with the fried vegetables and serve to the mother-in-law along with a nice glass of Rioja.
