Filleting Knives

I have a Rapala and to be honest it is useless. It looses it edge just looking at a bone or even skin, I had to hone it up three times for one 6lb pollack.

 

So which is the best knife????

I fish, I catches a few, I lose a few, BUT I enjoys. Anglers Trust PM

i'v had a martini one for 40 years trouble is its now thicker as the edge has been sharpened off ,ok for bait though if that's your thing .

interested to hear about new ones myself having owned one for so long i havn't a clue which is good out of the rest.

Believe NOTHING anyones says or writes unless you witness it yourself and even then your eyes can deceive you

I use a rapala for filleting and a boning knife from my local butcher to gut, bone, skin and cut bait.

 

I am not good at sharpening knifes with a steel or honing them, so I bought a diamond coated finger sharpener

I use it after three or four fish, and it makes things a lot easier.

No substitute for quality with knives. Buy yourself a good knife for filleting and only use it for that purpose. Keep it locked away so it doesn't get used for peeling spuds and the like. Buy a good quality serrated bread knife for skin and bone work, makes short work even of dogfish skin! Try the kitchen section of TK Maxx there are usually some really good knives at excellent prices. Good place to pick up a knife sharpener too.

Joking Aside A tip I read in the angling Times a Hundred years ago and swear by! Stay away from from Stainless steel knives They belong in the Kitchen not the Field, Stainless sharpens up well on a wheel or wet/oil stone but are not A lot of cop in the Great out doors it is Just to hard, the edge is fragile, and skill is needed to sharpen it well, especialy on a moving boat, Stick to Carbon steel it will tarnish mind you But it is softer So you can bring an edge up on it quickly with a few passes on a steel or even a dry stone.I have found it better to sharpen my knife every second fish any way, I made a sheath that holds the knife and steel.The steel is also on a lanyard, Some butchers sell on there old knives for Pennys, Southend Angling used to sell batches of five ex meat market knives for a tenner, they where great as they where not stainless Sharpen in seconds and costs FA if one went in the drink. Use puoltry shears as well they are designed for cutting Bone and grissle and are safer on a boat,

Someone once said to me "Dont worry It could be worse." So I didn't, and It was!

That looks handy, that. I've just ordered one of these to give my old knives a new edge. There's a thread about it here. This finger sharpener may be what I'm after to finish them off.

 

The knives I use are called Bait Preparation Knives on this page. They are strong reconditioned ex-commercial knives. Nothing to look at, but that's not what I want from a knife.
