I was shown by a commercial fisherman how to gut and skin doggies, its a bit hard to explain on a forum , but he sort of gutted and skinned em at the same time, you just need a very sharpe knife. Going back to the amonia thing again , you mentioned skate , I 've never soaked them either and never had a problem, I can't help thinking that if everybody else does it must be me thats wrong and I've got no taste buds or sense of smell :yucky::yucky:

Rock and chips is my favourite, that's why I'm so keen to give it a go. Plus it would make a day of doggies more worthwhile. Read that the reason for the ammonia is because they urinate through their skin.(P*ssing ammonia? That's gotta make yer eyes water, no wonder they look like that when you pull them up :D )

Preperation and recipie for Dogfish

1. Catch fish (easy when you dont want them)

2. Bang on head to kill, cut skin around head and halfway donw the back.

3. Hammer nail through head into piece of 2x4, grip skin with pliers and pull down end.

4. Cut through fish just above where the skin is left, then cut of head and pull any remaining gut away from flesh.

Recipie

1. Wrap fish in tin foil with butter and herb of choice and place in oven dish.

2. Place dish in oven at 180 degrees C for 30 mins.

3. While fish is cooking pop down to fish and chip shop and buy some Cod and chips and mushy peas.

4. Once home with fish supper the house will have a delicous aroma of cooking fish, take dogfish out of the oven and discard into dustbin or give it to the cat, it has served its purpose of aromatizing the kitchen.

5. By now you should be salavating and ready to enjoy some proper fish, open fish supper and tuk in. :D :D

Oh and can refrain from mentioning those fluffy land based creatures with big floppy ears on here, it is after all a watercraft forum ;)

1 on the lure is worth 2 from the bait.

doggies go well in curries and they're not bad as fish cakes either, i've never had any problem with ammonia in the flavour either with dogs or rays. As for rock salmon yes some of it is dogfish but alot is also wolf fish a different species entirely.Interestingly a commercial friend of mine told me his local chinese used to buy all the dogfish he could catch but he never bothered asking them what they did with them.
