reconmendations please

I doubt any Opinel will stand being hit with a mallet. Great steel for those not worried about stainless but while their temper holds an edge, it is very brittle.

Mallets are not a daily occurrence ,i doubt my mrs would enjoy picking up a billion bits when her glass cutting board explodes lol

Opinel bread knife - No.116

Its a wavy edge knife ,got a few of them they cut bread fine but lose their tomato ability quickly ,no good on frozen either.i would list the makes chucked in my metal bin but its a green wheely bin and they are right down the bottom!

 

Def a victorinox and a sabatier (especially crap!) A couple of sainsbury supposed top end and i think a saw edged bit of junk from dyas that went in last week that came pre blunt!

 

It seems to be the saw teeth plus those larger ones that do the trick!

 

Not going to pay more than £30 even damascus is rubbish its the edge that counts and a foot long bit of steel isnt worth more than a fiver plus the seconds a machine puts an edge on it! So their getting £25 for a name

Only a heathen would use a glass or marble cutting board. There is simply no better way to ruin your knives.

I was wondering about that myself. I know you expect "above and beyond" from your kit, but I somehow couldn't picture you battering a bread knife with a big hammer ;-)

Thats all we have ,not going to cut a bit of crap chipboard work top up and i dont like wood its not as thin as glass ,my kitchen is very small !

 

We have had a glass one (before that a bit of marble) for 18 years the marble probably 10 years before that so if my prestige is only now dying its not like a modern knife regarding glass or marble

I expect anything to not break if i can use it ! If something breaks in its supposed function its junk ,you should see what i cut with lawnmowers lol ,so far i have never broken a (old version probably new ones are junk) a honda 21" a hayter 19" and a honda mat! If i have the strenght to use them they should have the strenght to work!

 

One job i did was 'mulch' a very large garden full of brambles so it fitted into black bags i almost broke me doing it but the honda survived (and didnt swear so much either)

I can guarantee you that they will cut tomatoes for many years. If you really need to hack your way through frozen meat on a regular basis, get a butcher's saw.

I've pushed a mountfield through some stuff that I am sure it was not designed for. Never could quite get my head round the mindset that if a tool fails doing a job it was not designed to do it was a crap tool in the first place.

 

I used to own a fine pair of dress-makers scissors. They served me well for many years until my flatmate decided to use them as secateurs on a bit of privet that was too thick for his lopper things. Does that mean me scissors were crap?
