Snatcher:

I would like to see several blokes, worse for the beer, trying to follow some of those recipes! Keep it simple Snatcher or you'll have a disaster!

My recipe only involves a fire so easy when totally ******!!!!!!! :confused: :confused:

hi tony how are you?in this area they tend to use dorada in that dish, its quite reasonable in price, as there are huge fish farms, moored offshore all along the coast here that have dorada, and lubina(bass).

Black bream?

Best I ever tasted, was done on a whim.

We were fishing out of Weymouth, when we discovered we had a chef on board. Quick call to the `Sailors` and we had free range in the kitchen. Well, we were all staying there.

OK. Having gutted the fish, our chef slightly elongated the `cuts`, to enable the fish to `stand up` on their belly flaps in the oven! Well, the thinest bit of flesh is in the coolest part of the oven, so the fish were cooked evenly.

They were brought out on trays. 3 X 3lb bream, standing up proudly on each tray.( That`s 2 trays with 3 bream per tray) He`d done a simple sauce as an accompaniment.

We all started off be saying we didn`t want any? We ended up fighting over the scraps!!

Subsequently I took a few black bream home and cooked them the same way. They now earn me precious brownie points.

We don`t use J`s anymore!!

Plan B if totally lashed is have a meal in the boozer which is 50yds from my caravan :D:D

Why don't you see if the Pub will cook the fish for you? For a suitable renumaration of course.

Snatcher, I totally agree with Frantic on this one, we don't want to read about the Great Angling BBQ Disaster in the red tops do we!

BBQ'd a nice Bass once, got the idea from AN, it was too big for the oven :) (oh and I never caught it by the way pumpkin )

 

Very basic, de scaled, stuffed with Fennel and some Lemon Grass, lightly oiled (fish) and put on the BBQ, the next bit was the best :D , when it was cooked a liberal amount of PERNOD was poured over it, flambe, watch the eye brows as it realy goes up in flames BUT leaves a Caramel coating that makes it just that bit FLASH as it were.

 

Mackerel, like it in boiled sea water but have you ever tried it Curried? Fillet the Mackerel very well, which means a lot of waste but worth it. Make the Curry mix a day before and just cook the fish either in a frying pan or boil up in a pot. It is nice cold as well and as with all curries tastes better the second day.
