I believe our dinner is due to meet her maker this weekend. I am on plucking and dressing duty.

 

New years Eve, or Revellon de Saint-Sylvestre we will be having some of the neighbours, (French and English) around for a glass.

 

Today was my Wife's birthday so we went to a local Bistro where we had (amongst other things) a dozen Esscargot de Bourgogne and Magret de Canard washed down with an inexpensive but very good Rouge de Pays de Loire from just down the road.

Lucky bugger, I love snails, and duck (amongst other things). Bon courage for the plucking. Je déteste ça.

 

I like a bit of venison too ;)

 

I don't think the have Roe in the States. They do have Red Deer, but they call them Elk.

Call yourselves real anglers, Christmas dinner should be a pot noodle and a crate of stella while bivvied up at your local lake.

 

A couple of days off work and you will not be camped out at your local lake trying to catch P### Wings or Rudolf, what sort of anglers are you.

 

Bunch of amateurs :D

 

PS: Christmas dinner is Turkey, Goose and Gammon, anything else is just deviant behaviour.

Huh, wot you like, camped by the local lake, that ain't angling, thats brown pond puddle bashing. Na real angling is out on the briny somewhere going up and down in a thirty foot swell, managing to hold on and catch fish at the same time. Any day of the year will do me. :P

Consumer of bass. where is the evidence that the u k bass stock need angling trust protection. Why won't you work with your peers instead of castigating them. They have the answer.

Deer here - usually white tail. Meat is very dry if not properly cooked but wonderful if the cook knows how. No roe that I'm aware of and no elk this far south.

 

We are having a standing rib roast (beef) with the usual veggies, chess pie & pecan pie for desert. Unfortunately, the daughter who is hosting the meal is anti-alcohol so no wine.

Hazel and I are on our own Xmas day :) :) Since I met and started to fish with a top class chef, Haxwl has got into sauces in a big way.

 

So, on xmas day we are sharing a large slice of Fillet steak, and a sauce which will contain red wine and green peppers and a lot of other stuff, about which I have no knowledge (each to their own)

 

It will of course be a superb meal as usual :)

The humble Broad Bean isn't everyone's favourite, but I've yet to meet a dinner guest who doesn't like this recipe, which brings the best out of this neglected vegetable. A marvellous dish if you grow your own full-flavoured varieties - try Red Epicure for a flavour sensation!

 

It can be prepared in advance, but may need to be thinned with stock, water or extra cream on re-heating.

 

It's not an original recipe, but I can't remember the source (it's an old book).

 

Broad Beans in Cream Sauce.

 

2lb Broad Beans, fresh, frozen or tinned

200ml Chicken Stock

3oz butter

1-2 tsp celery seeds

1tsp sugar

250ml double cream (or substitute)

salt and freshly ground black pepper

 

In a good, wide and heavy pan, melt the butter into the stock. Add the broad beans, celery seeds and sugar. Cover and cook until the beans soften.

Drain the liquid into a blender, plus 1/4 to1/3 of the beans. Whizz up, gradually adding the cream (you may need to add milk or water to thin the mixture a little) to make the sauce.

 

Add the sauce back in to the remaining beans, season to taste and reheat gently. Serve hot.

 

Yum, my favourite :)

Thanks for that link Barry. My father is on anticoagulants and loves sprouts (amongst other greens), now he'll have to reduce the amount of green stuff he eats in case they mess with his blood!
