It referred to the dish, and then to the style of cooking (as in rosbif de mouton), before it became unfashionable and a derogatory reference to the British. It seems strange now, in the light of how arrogant the French can be about their cuisine.

The English word "roast" comes from Old Fremch "rostir" and they got it from Old High German via the Franks. It seems kinda funny to me that people would have a word for something they didn't do.

Yes the French think that their cuisine is the best in the world. They think the same about their education system and health service. I don't think any of those claims are justified. I prefer pukka Punjabi food any day of the week. Not the crap that you get in fast food take-aways (mind you there are exceptions) but stuff that my Sikh buddies cook at home.

Do you really believe that the French had not thought about chucking a bit of meat in the oven prior to the 1700s?

There is more to the style than just roasting. The style amounted to the quality of beef, the cuts, the technique of roasting and basting, etc. One might as well say that the soufflé is nothing new to someone who can cook an egg custard!

 

We're talking spit roasting and open fires, here, not ovens, and we are talking habits of the rich, not the peasants, BTW.

And spit roasting over an open fire was invented by the English?

French cut's of beef are totally different than English, even us Scots have cuts of beef that I can't easily get down here e.g. Popeseye steak or beef ham.

 

Cooking meat in a pan was invented by the French?

Well this week (perhaps for several until others are found ) the oldest european cookery methods must come from Happisburgh going by the evidence so far if its correct ofcourse,but spain and france not far behind in their cave restaurant chains
