Whitefish, John - the powan, pollan, schelly, gwyniad, vendace, depending on species and where in the British Isles you find them.

Ah, I see Steve, it was just the way I read it.

I was a bit disappointed, I thought Rich had found a new tasty carp recipe.

Angling is more than just catching fish, if it wasn't it would just be called 'catching'......... John

Based on that experience their scarcity is nothing to do with their eating qualities - though given that I would have expected zander to taste as good as perch, perhaps I should blame the chef rather than the whitefish!

Zander is very popular here in France and at 28 Euro a kilo in our local supermarket, pretty expensive. Pike is only 18 Euro a kilo.

Let's agree to respect each others views, no matter how wrong yours may be.

I first had zander on a trip to the Baltic as a thank you for writing a chapter for the Rapala book. Knowing that perch was my favourite fish they served some up for dinner to watch my reaction. I loved it. But the zander we had the following night was even better.

In fact Zander's now my favourite fish. I've not eaten it very much as I've never seen it in the UK. We hadn't gone abroad for some time until we went to France in September, where I actually sought it out. I could find it only once, but it was delicious.

Were the fish caught from the Baltic, Steve? The perch I tried in Finland were caught there, and they were absolutely superb. We caught them in gill nets and then hot smoked them over a little fire. Best fish I've eaten!

I assume so as we were staying on some islands in the Baltic.
