Chalkstream Salmon

Maybe John West are looking for an opportunity to charge an extra Quid a tin for "Chalk Stream" Salmon"??

Interesting article on the BBC suggesting they might be a separate sub-species....

Can anyone actually taste the difference between Atlantic & Pacific?? (or indeed Farmed)

Salmon is Salmon - innit. (Fresh of course - tinned not quite the same lol)

Nature will always find a way to cope with local & global challenges.

Atlantic salmon and the Pacific salmons certainly taste different. They're different species. The farmed Atlantic salmon Sainsburys sell is ~15% fat. The wild Pacific salmon they sell is sockeye (Oncorhynchus nerka) and is ~10% fat. Makes a big difference to the taste and texture (and sadly the calories!).

Steve,

We have several "salmon". (From Google) "The upriver salmon migration is one of nature's most exciting dramas. But to the five species of Pacific salmon (chinook, chum, coho, pink, and sockeye), it is a long, strenuous, desperate race against time, with every obstacle taking its toll."

Now, from Phone (a much more reliable source). Salmon fry return to the sea tail first.

Edit: We also have some "land-locked" salmon. I forget what they are called

Indeed, multiple species. I wouldn't agree that "salmon is salmon" at all.

Absolutely We caught and brought back a load of chinook (King) and coho (silver salmon) from a trip to British Columbia - greatly superior to "Wild Alaskan" (Sockeye aka Red) which is in turn superior to dog (chum) and pink (humpback) salmon. I have also caught my share of Hampshire Avon salmon, and while I can't honestly say there is a marked difference in taste from wild salmon I have caught in Scotland and Ireland, all three are vastly superior to farmed salmon for the reasons Steve stated earlier in this thread.

The outfit we went with to BC specialised in trimming, freezing and packing for air travel the thick end of a hundredweight of fish per person - they even held it in cold store until our return flight. Dunno if they are still in business
