Knife sharpening

On my last fishing trip (last week) i encountered a ridiculous amount of fish that needed filleting , not too much of a problem as i stumbled upon a knife that my late father had sent off to be expertly sharpened by a company who specialised in it. The knife in question had been tucked away in a compartment of an old tackle-box for quite some time (10 years+ i reckon) and it was in pristine condition when i found it. It made light work of the fish , cutting through the flesh and skin as if it wasn't even there , and there were quite a couple of big ling thrown in to boot, still no problem.

 

After catching the blade on a few bones , it did dull the blade (the trip in question did bring home 180 stone of fillet , to which i would have filleted 50% of it) so that's a lot of work by the blade , but it has honed up nicely on a stone.

 

The reason for my question is this.......i have around 5 other knives which i always take with me , you can never have too many knives , and would like to send these off to a specialist who could bring them up to the standard of the one above.

 

Do any of you guys use or know of any companies who specialize in putting a cut-throat razor edge onto a filleting knife?

No idea if there are any specialists left but with new knives being so cheap these days, I doubt it.

have you considered trying something like this ?

I've no idea if they are any good but I was thinking about it (no more scuff marks on my blades from stroke on the stone at the wrong angle) and the two guys that gave reviews seem to rate it highly.

If you want to spend a bit more, the Spyderco Sharpmaker is, to my mind, the best knife sharpener around.
Spyderco make some really nice knives too. I like Gustav's for the kitchen though. Edited by corydoras

Most local butchers hire a company to do there knives, have a word with them.

our local company is Nellas, they are an italian company who have been sharpening Knives since Victorias days.

Someone once said to me "Dont worry It could be worse." So I didn't, and It was!

our local company is Nellas, they are an italian company who have been sharpening Knives since Victorias days.

Your quite right FB. Some butchers don't even buy their knives, they rent them from a company like that.

Take them to your local butchers im sure they will give them a quick edgeing on a steel for you. Thats if you can find a local butcher these days
