not many like a roast then, its all about the trimmings

what are the sausage in bacon called?

At the risk of being serious, I believe they're referred to as pigs in blankets. Yum.

Setting the rimmings aside.....

I've got the folks around again this year and was all set to go traditional but got a phone call with a special request so that's out the window now.

Actually, I'm quite happy about it because I can do nearly all the prep the day before now.

The menu will now start with smoked salmon and cream cheese on rye bread with salad.

The main course will be a sweet potato and Parmesan gratin, served with pancetta wrapped chicken breasts stuffed with Stilton. Sides will include asparagus and fresh baby carrots.

For pud, I have a commercial Christmas pudding but I'll probably break it up, add a little home made elderberry port and wrap individual portions in filo baskets and serve them up dusted in icing sugar and with a big blob of cream.

YumYum !

Very organised, Ken. We've also got the olds over this year, but all I've sorted is the meat - I've ordered a shoulder of pork and a rib of beef. The beef is for Xmas day. The pork, I am going to stuff and roll and cook very slowly for Xmas eve. I'm thinking dried apricots, citrus, Moroccan spices for the stuffing, maybe using couscous rather than breadcumbs.

Christmas day it will be a haunch of venison, marinated in red wine and served with a red wine sauce and red currant jelly. Braised red cabbage, garlic roast tats and roast squash.

Home made Christmas pudding and custard made with Birds' custard powder.

New years day will be a turkey which is still wandering around in my neighbours orchard. :P
