Well I am off Chorizo smuggling again next week, there is a butchers stall in Chipiona market which does 2 kilos of Chorizo for the price of one, so they are going back in the holdall, it makes everything smell nice.

 

Captain C is the Callos prepared the same in Valencia as Andalucia i.e. pork tripe and other bits with chorizo and chick peas or do they do something different?

no idea about the callos,ive seen it here, but i wouldnt say it was one of the common dishes of my area.

And beginning in 'Brat'....

there's even more than one form of "brat"wurst, John. Being of Hungarian/German heritage, I grew up eating Hungarian and German bratwurst. Hungarian is the absolute best and my Mom's godmother made it herself. There's also Weisswurst, Rotwurst, Jagdwurst, Berrwurst, Schinkenwurst, Kalbsliverwurst, Liverwurst (a fav of Mom and Dad), Gelbwurst, Kalbsliverwurst, Blutwurst (your black pudding), and Knackwurst. Oh, and don't forget Fleischwurst. Now I live in the South and I think the only place to get "wurst" is at the "Roadkill Cafe". :P

 

Hoppy's wife, Petra, would be an expert on the German side of this delicacy.

I found this one as well, Suffolk Salami, I will be close to a couple of their outlets next week so I do intend to give them a try.

 

In true British tradition the listed supplier I went to in Cley in Norfolk didn't have any in stock. :(

The struggle to find good salami goes on, I don't buy ready sliced stuff in packs so Tescos are ruled out, Sainsburys now only stock a very mild and sloppy Saucisson Sec, (not very sec at all really), Waitrose sometimes have something more interesting but not always. Lidl stuff I've tried and it wasn't good, just cheap.

 

Almost everywhere I look I can find a half dozen types of Chorizo, I don't mind Chorizo , but it's not Salami, it makes a decent pasta sauce with some prawns and plenty of garlic, but that's about it for me.I have no other use for it.

 

I've just taken delivery of an ebay order from these people below and the search may be over for a while, only tried one so far but it was good.

Have you tried making your own? Just be sure to add the appropriate amount of salt and sulphates to keep any nasties away and you're good to go.

If you pass through Birmingham, the markets are pretty good - which reminds me that it's time I stocked up on bacon/pancetta.
