Have you tried making your own? Just be sure to add the appropriate amount of salt and sulphates to keep any nasties away and you're good to go.

No, not really considered it: earlier in this topic it was pretty much established that we don't have the right weather in this country to air dry meat products, I can't think of anything new to bring to the party in that respect. I've made my own Bacon before now and a sort of Ham from Duck breast, I wasn't overly impressed with either.

I also struggle to find a good coarse pate. I've made my own a few times, and like the Ham and Bacon the result hasn't always been what I've wanted and it concerns me making anything in large quantities if I'm not happy with the recipe, (or maybe my execution of it). Plus there's only so many hours in the day and many other things to do.

It should be easy to buy these things. Why can't grumpy old gits have convenience foods too? Perhaps I should move to France. :o

I can ask my son or daughter to bring over some good sauccison sec when they come for Christmas if you want.

My old Granny used to dry salmon in the rafters of the house and make her own bacon. The Norwegians dry cod. The butcher next to the Post Office in Chandler's Ford makes really good biltong. The idea that you can't air dry stuff in this country is a load of old horlicks I think. I might have a go at making some sauccison sec myself next summer. just to see how it turns out.

The problem isn't what people don't know, it's what they know that just ain't so.

Ayjay,

It's because Englishmen are horrible cooks and even less imaginary.

Cory,

Ha ha, what's your point? Just maybe it takes one to call one. Your do-dads have absolutely nothing to do with the horrible food in England (mostly boiled).

I would confess to eating out every breakfast (with the boys) and I quite often have grits and chitlins. Maybe 2 days a week 100% of my sustenance comes from fast food joints - pizza, McDonalds, Taco Bell, you know - the good stuff with artery clogging grease.

Weird how they dominate lists of the world's best chefs than...

This one even states that "Most famous Chefs are American or French" and then goes on to place British chefs in 4 of it's top 5 positions.

It seems taste comes in extremely small portions ,i like nothing more than a plate of potatoes or cabbage with normal gravy on top ,having gone without food in the 50's i am not in the slightest fussy nor bothered with taste in food ,i like my bread extra bleached rather than none at all

Probably the most bland meat on earth is sold in lidl ,i still think most is sold as a joke on the brits and the fruit sits for a fortnight on german shelves before coming here ,"put zis out of date fruit in zee skip mine shop fuhre?" "Nein sell it to zee brits they von zee war the bastards"

Thanks for the offer Cory, I'll decline for now as I'm sorted for the moment, (and we usually get a visiting French Market in town a couple of times a year when I can stock up a bit) but I'll keep it in mind if I ever get desperate.

I'll be interested to hear how you get on if you do have a go at making some.
