Hooray! It's Pancake Day

A tradition in every house that I’ve lived in since as far back as I can remember. With ingredients bought I was accosted by a Waitrose lady (Sharon) and given a complimentary bottle of Betty Crockers Traditional Pancake Mix, add water etc etc. In my opinion there aren’t any shortcuts to a decent batter so I’ll be undertaking a back to back comparison with my own recipe.

It’ll be an odious task but I’m up to it, no need for posts of encouragement. Two pancakes of each mix will be made, one of each will be the bacon and maple syrup main course and the other will be the lemon and sugar desert. Whichever mix wins will be made into several more pancakes.

Summer Parsons crosses the finish line to win the Liberal leg of the International Pancake Day Race with a time of 63.5 seconds in 2014. Olney, England’s Devon Byrne set the world record with a time of 55.61 seconds for the 400-yard, S-shaped course.

We are ready this year !! We invited Devon Byrne to be a "guest" in the US and she won't be running for Olney England this year.

If you want to taste fantastic pancakes take a trip to the Netherlands and find a Pannenkoekenhuis. My kids who don't like pancakes were getting stuck in as if there was no tomorrow

None tonight (I've been out) but I do pancakes regularly. The traditional British version are not for me (unless I'm making cannelloni) and mine are a serving spoon each of plain flour, fine cornmeal and sugar, a teaspoon of baking powder, a pinch of salt, a good glug of oil, an egg and enough milk to make a fairly thick batter.

Cook them on a medium heat so they rise to about 12mm thick and are light and golden.

I tend to serve with honey, sliced fruit and (if I'm feeling adventurous) whipped cream - but bacon and maple syrup works too.

Bacon and Maple syrup? :yucky:

Bacon is excellent with any number of sweet treatments.

Make three: the first one is always rubbish.

Bacon and Maple syrup? :yucky:

Bacon and Maple Syrup is bloody good. Just like Baked Gammon Glazed with honey.

Have you ever tried a proper streaky bacon with maple syrup?

We are not very adventurous with our pancakes. It's the same if you visit a creperie in France.

I like eggs, cheese and mushrooms in mine, preferably with the whole meal gallete rather than a crepe made with white flour.
